TYOP. Sorry for the rant that follows: I like raw almonds, but now Almonds must be pasteurized and can still be labeled raw. Gives me another reason to dislike politicians. If they focused on proper handling of food, food would not need to be "cooked" before distributing. Just like all the recent salmonella scares - if people handled spinach, etc. properly, these problems would not occur. But instead of addressing proper handling, they slap a generic band aid on the situation and let it go - until the next issue when more people die. edit: For more information, read their (Almond Board's) own article here. "To date, FDA has approved oil roasting, dry roasting, blanching, steam processing and propylene oxide(PPO) processes as acceptable forms of pasteurization for almonds."
